Let’s face it, most of us don’t have the time and energy to cook and clean up after a huge dinner every night. This is why one pot dinners are some of my favorite! Everything cooks together in one big pot and makes serving and cleanup super easy. This one pot dinner is a delicious and healthy Pumpkin Stew with Cabbage and Herbs! You can substitute pumpkin for butternut squash, which is what I did because my local supermarket had a bunch of fresh butternut squash on sale.
This yummy stew is flavored perfectly with lemon, rosemary, and vegetable bouillon. This vegan dinner couldn’t get any yummier! Between the rice, black eyed peas, cabbage, and pumpkin, you get a super filling, healthy and complete meal that cooks together, all in one pot!
